Welsh Honey Products
Geoff and Janice Critchley keep their hives in North Wales and have produced over a tonne of delicious Welsh honey a year! But with reduced honey production in recent years, most of the honey and beeswax is used to make “wedding favours”. Our Honey is still available from Cilcain Post Office, at Cilcain Show and Conwy Honey Fair. Geoff now breeds Queen Bees and runs beekeeping courses.

“We give talks on beekeeping to all kinds of clubs and associations across North Wales and the borders, together with an opportunity to purchase some of our products.” Geoff also gives talks and demonstrations to beekeeping groups throughout North Wales, Cheshire, Lancashire and Shropshire.
The colour, flavour and aroma of honey varies with the flowers on which the bees feed. The most common sources of nectar for our bees in North Wales are Blackthorn, Sycamore, Horse Chestnut, Dandelion, Blackberry, Rosebay Willowherb and Heather.
Most of our hives are on permanent apiary sites, but we move hives to other locations for particular crops. Some years the bees were taken to Hereford for Borage (Star flower) and in late summer hives are moved onto the Clwydian Hills for Heather.

In September we take away the honey produced by the bees during summer, whilst
ensuring sufficient stores for the colonies to survive through the winter.

Honey Cheesecake
Delicious with whipped cream and strawberries.
1 ½ cups plain sweet biscuits
½ cup chopped walnuts
3oz melted butter
3 cups creamed cottage cheese
3 eggs
½ cup Honey House honey
¼ cup castor sugar
2 tbsp flour
Combine biscuit crumbs, chopped walnuts and melted butter. Press firmly over base & sides of a 7” loose bottomed tin. Chill while preparing the filling mixture. Push the cheese through a sieve and beat in eggs one at a time. Add the honey and the sugar. Beat until smooth. Fold in the flour and turn the mixture onto the biscuit base. Bake in a moderate oven (350 F) for about 1 hour. Leave in the oven with the heat turned of until cold. Serve with cream & strawberries.

Local Events
Held in mid September each year, the Conwy Honey Fair is Conwy's oldest tradition.
The 700 year old street Honey Fair was founded by King Edward 1st and is now organised
by Conwy BKA. Local beekeepers sell more than a tonne of honey by lunchtime. There
are also, crafts, plants and local produce stalls.
