Beekeeping Courses
This sticky cake can be made with walnuts or hazelnuts and can be served with raspberries and cream.
8 oz lightly flavoured Honey House Honey
6 eggs, separated
1 teacup of sifted flour
1 teacup walnuts OR hazelnuts pounded in a mortar with a tablespoon of caster sugar
½ teacup cream
Heat the oven to 175C/350F/gas mark 4.
Put the jar of honey in hot water to make it workable.
Beat the egg yokes in a large bowl then pour the honey over them
Gradually add the sifted flour and the hazelnuts and sugar, then bind the mixture with the cream stirring together thoroughly. Whisk the egg whites stiffly. Stir the first tablespoon into the mixture and then fold in the rest with a spoon.
Pour the mixture into a buttered, lined souffle dish or cake tin. The buttered sides can be coated with a few extra walnuts.
Cook for about 40 minutes.
Cool before turning out.

He has taught the beginners courses for Conwy Beekeepers since 2006 and for South Clwyd Beekeepers since 2005.
